Rock star Brownies!*

Ok! yes! These are a new favorite! “Rock Star Bars” I found a new blog I definitely will come back to. Cooking With Karli. See her recipe below.

I prefer to make bar cookies now. First the take less time to bake for so many people. Second, the ingredients are different enough that as a cookie they go flat, but as a bar they turn out better. (The individual cookies usually end up flat). Dave started making them in a cupcake pan, but again, that's only 12 at a time. So, I have resorted to bar cookies. There is another good recipe I’ll post for a sugar cookie bar.

Since I have been cooking here I have started weighing my ingredients, which makes much more consistent results. The flour often arrives quite clumped, so weighing it is much more accurate. This is also why I now sift my dry ingredients.

Ingredients

  • 1 cup (222g) salted butter

  • 1 cup (246g) brown sugar

  • 1/2 cup (115g) granulated sugar

  • 1 egg

  • 1 tsp vanilla

  • 2 1/4 cup (342g) all-purpose flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 cup (200g) milk chocolate chips

  • 1 cup (200g) semi sweet chocolate chunks

  • 3/4 cup (45g) crushed pretzels (not a lot of pretzels here, but there are long flavored bread sticks that i used)

  • 3/4 cup (132g) toffee bits (didn’t use this either)

  • flakey sea salt, for garnish (The salt here is more like course salt. That’s all I use)

Instructions 

  • Preheat the oven to 350° F (180°C). Spray a 9×13 pan with non-stick spray and set aside.

  • In the bowl of a stand mixer or with an electric hand mixer, cream together the butter, brown sugar and granulated sugar until light in color and fluffy in texture. This will take about 2 minutes.

  • Scrape the sides and add in the egg and vanilla. Mix until well combined.

    Next, add the flour, baking soda and salt. Mix until a soft dough forms.

  • Now you will add in all of the mix-ins– the milk chocolate chips, chocolate chunks, pretzels and toffee bits, and mix until evenly distributed.

    1 cup (200g) milk chocolate chips,1 cup (200g) semi sweet chocolate chunks,3/4 cup (45g) crushed pretzels,3/4 cup (132g) toffee bits

  • Finally, press the dough into the prepared 9×13 pan and sprinkle the top with sea salt.

  • Bake at 350°F (180°C) for 15-17 minutes or until the edges and the top begin to turn golden brown.

  • Allow the bars to cool completely before cutting. Enjoy!
