Our First Paella!

Okay, so, picture this: our first real-deal Paella adventure in Spain! Now, let's be real, seafood and I? We're usually just acquaintances. But, oh my goodness, this Paella was a full-blown flavor fiesta! I even fell head-over-heels for the mussels! Seriously, who am I?! Huge thanks to our amazing Bishop and his wife for the invite and this epic meal. She even gave me a sneak peek into her paella wizardry in her kitchen!

Here's the lowdown: First, you get your onion, garlic, and those colorful peppers sizzling. Then, in goes the rice with some tiny potato ninjas (I think!). Next, the shrimp and all the other sea treasures join the party, except for the clams and mussels – they get their own VIP saltwater spa treatment and join the bash later. Apparently, this paella magic only happens on a gas stove with a special burner dance and a legit paella pan. And get this: the whole thing cooks directly on the flame until the grand finale when the shellfish royalty arrives. Then, BAM! It gets lifted onto a little platform above the flame to carmelize the rice at the bottom. Pure culinary fireworks! Seriously, my tastebuds did a happy dance. I need to get back in that kitchen and get all the secrets!
