“Marry me chicken”

This Sauce is Delicious - can not verify it’s claim to be the “original Marry Me chicken” by Delish.

I made this sauce and put it over precooked chicken cubes that we buy at Makro. Our young adult budget got cut so i am trying to use everything I have in the house. I had the box shelf-cream, the chicken and a jar of sun dried tomatoes. It needed more tomatoes for the quantity I was doing so I added a can of cubed tomatoes from my cupboard. Emptying the cupboard never tasted so good.

Ingredients

  • 3Tbsp. extra-virgin olive oil, divided

  • 4 boneless, skinless chicken breasts

  • Kosher salt

  • Freshly ground black pepper

  • 2 garlic cloves, finely chopped

  • 1Tbsp. fresh thyme leaves

  • 1tsp. crushed red pepper flakes (I used less)

  • 3/4cup low-sodium chicken broth

  • 1/2cup finely chopped sun-dried tomatoes

  • 1/2cup heavy cream

  • 1/4cup finely grated Parmesan

  • Torn fresh basil, for serving (I bought this!)

Directions - as written by Delish:

  1. Arrange a rack in center of oven; preheat to 375°. In a large ovenproof skillet over medium-high heat, heat 1 Tbsp. oil. Generously season chicken with salt and black pepper and cook, turning halfway through, until golden brown, about 5 minutes per side. Transfer chicken to a plate.

  2. In same skillet over medium heat, heat remaining 2 Tbsp. oil. Stir in garlic, thyme, and red pepper flakes. Cook, stirring, until fragrant, about 1 minute. Stir in broth, tomatoes, cream, and Parmesan; season with salt. Bring to a simmer, then return chicken and any accumulated juices to skillet.

  3. Transfer skillet to oven. Bake chicken until cooked through and an instant-read thermometer inserted into thickest part registers 165°, 10 to 12 minutes.

  4. Arrange chicken on a platter. Spoon sauce over. Top with basil.

Directions of what I did:

  1. Put the oil in the pot with the garlic, thyme, and red pepper flakes. Cooked for 1 minute. Stirred in Bouillon cubes and water. Stirred in canned tomatoes and sundried tomatoes. Warmed this for a few minutes. Added cream, parmesean, and salt. From here I took the sauce in an Ikea bucket to the church.

  2. I put the sauce in a pot on the church “warming stove” and put all the cubed chicken in with it and warmed it.

  3. We served it over white rice - because that is what they like!
