Another delicious recipe from Carlsbad Cravings

One of the great things about Carlsbad Cravings, Jennifer, is that the dishes are very flavorful. This could just be a basic chicken salad, but the chicken has delicious flavor on its own and makes it a meal.

The Young adults love protein and chicken (breast particularly) is cheaper here than any other meat. It is still $5-$7/pound! It seems like meat is just expensive everywhere now.

I do not grill any of the vegetables or meat for simplicity, but when I make this at home I will grill it all!

The other thing the young adults love about this is the opportunity to put together the ingredients that they want.

Chicken (see notes)

Bowl

  • 4 cups cooked rice (white, brown or cauliflower) seasoned with salt, pepper, lime (I have done a mix of Cauliflower and white rice to add health to the diet of those who wont choose vegetable)

  • 1 1/2 cups shredded cheese (sharp Monterrey or pepper Jack)

  • 1 1/2 cup chopped Romaine or iceberg lettuce

  • 1 15 oz. can black beans rinsed, drained and warmed (we always make our own beans here, which is why many of the Young adult missionary couples buy some type of InstaPot)

  • 1 cup halved cherry tomatoes or 2 chopped Roma tomatoes

  • Fresh sweet corn from 2 cobs (I have available only frozen corn)

  • 1-2 tablespoons finely minced fresh cilantro

Avocado Crema

  • 1 medium avocado

  • 1/2 cup sour cream or Greek yogurt

  • 2 tablespoons mayonnaise

  • 1 tablespoon lime juice

  • 1/2 teaspoon salt

  • 1/4 teaspoon ground cumin

  • 1/4 teaspoon garlic powder

Add ons: (I put out most of these)

  • mangos

  • Chopped Pineapple (I did this one and it was delicious!)

  • Lime wedges

  • Tortilla chips

  • pico de gallo (for me cooking for 50 it is not worth the time to make - )

  • salsa

  • sour cream (I always use plain yogurt)

  • hot sauce (Not very many like anything spicy here)

  • Zuchini (cut up and cooked all dente. May sound strange, but most will eat it)

  • cucumber (also readily available and adds more to it)
