chicken and rice

Ingredients

  • Olive oil in Pan

  • 1 large onion diced

  • 3 ribs celery diced

  • 2 chicken breasts cooked in InstantPot

  • 3 cups chicken stock

  • 2 teaspoons salt

  • 1 teaspoon ground black pepper

Instructions

  • In a large deep skillet over medium heat the oil.

  • Add the onion and celery and cook until softened but not browned.

  • Cook the chicken in the InstantPot (at Tastes Better From Scratch)

  • Add the stock from the InstantPot chicken and the chicken to the vegetables. Bring to a simmer. Add chopped fresh parsley or dry or oregano

  • Serve over cooked rice!
